Professional surfer Matt ‘Wilko’ Wilkinson catches new break with Byron Bay hinterland venture

Professional surfer Matt ‘Wilko’ Wilkinson and partner Anna Jordan (inset) have launched their exciting new Byron Bay hinterland venture.

They bought the Possum Creek cafe, Lilliana’s, with ­adjoining home, which has been updated and relaunched as Friday Hut Dining and Friday Hut Road Estate accommodation.

Wilkinson has collaborated with local chefs Joseph Griffin, who formerly ran catering company Joe Chef, and Matt Donoghue from Grapevine Catering. Their recent diners included surf legend Mick Fanning, along with fellow surfer Ben Gordon and surfboard maker Al Emery.

The property had previously been the Possum Creek School, before its conversion into a restaurant by prior owners in 2006.

The school, around 16km inland from Byron Bay, dated back to the early 1900s.

Wilkinson and Jordan will be living in the house, and holiday letting it when they’re travelling. There’s also the boathouse on Airbnb.

They’ve also recently secured approval for a $33,000 swimming pool.

Bangalow Real Estate agents Gary Brazenor and Mary O’Connor sold the property last year.

Wilkinson has owned at Suffolk Park since 2016.

He recently sold an investment property at Copacabana for $780,000.
